The 144,000 is, to some extent, symbolic. Hebrew numbers held spiritual connotation. 3 was often tied to power (especially power to help), 4 was tied to God. 10 meant 'a lot', 100 meant 'a fantastic amount', and 1000 meant 'infinite or immense sums'. Thus, 12,000 from each tribe, or 3x4x1000, is a representation of "The infinite power of God." Or, in other words, it is the priesthood. Going to all twelve tribes means that the priesthood would be extended to all peoples in equal power. In other words, the 144,000 signify the worldwide priesthood in the last days.

To say that they were virgins is a call-back to the powerful image that Ezekiel and Isaiah left, where Israel and Judah were compared to harlots who went 'whoring after' other Gods. The 144,000 are virgins to wickedness and idolatry, not specifically to intimate relations

And in Jewish tradition only married men could be high priests as well as speak in the Synagogs. This causes some to have the theory (among other things) that Jesus was married or he would not have been allowed to be considered worthy to teach in the temple or synagogs.
